My 'Leftovers' Omelette

I love having a big breakfast on Sunday mornings.  I have the most amount of time to spend on cooking breakfast on Sundays, and so I tend to lean towards something gourmet. In this case, smoked salmon, with eggs and hollandaise! This past Sunday,  I made the most flavourful omelette ever.  It was so good, in fact, that it must be passed on.

Mel’s Smoked Salmon Omelette:

  • handful of chopped spinach (1/2 frozen pkg)
  • 1/4 c. cottage cheese
  • 1/4 c. cream cheese
  • pinch of dill
  • 4 pieces of sundried tomato
  • 1/3 c. smoked salmon
  • 2 eggs
  • leftover hollandaise

So, I first sauted the spinach to remove the water content and to allow the spinach to absorb the flavour of dill.  In a bowl mix the spinach, cheeses and (chopped) sundried tomato.

Prepare your 2 egg omelette, drop the spinach mixture onto omelette and let cook.  When nearly done, toss in the smoked salmon. Fold. Cook til desired doneness.   Drizzle with hollandaise.
